Add chicken to remaining barbecue sauce. Heat remaining oil in the skillet over medium heat, and stir in the red bell pepper, yellow bell pepper, orange bell pepper, and onion. Carefully cut a pocket in each chicken breast half. Fill with cheese; secure with toothpicks. Also, I messed up and added the barbecue sauce in the beginning; it still turned out okay, but next time I'd like to try it as written, and see how it turns out.
